Make burger patties about 1/2 inch thick. Chill shaped patties in the refrigerator for an hour before cooking on a preheated grill. This makes them firm for grilling.
Hamburgers get a tough texture if you handle the ground beef too much when shaping into patties. Pressing down with a spatula while cooking a burger releases those savory juices making the meat less flavorful.
